Sara Lee and Marie Calendar make fantastic pies. Find them in the frozen section and go that route. I don't have the space to make pies, so that is what I do. They really are that good. Marie Calendar's crusts even taste home baked.
As for great recipes....I have a super duper simple salmon recipe that is utterly fool-proof, so long as you set a timer. And it only takes 15 minutes from start to finish. The first time I tried it, I had never cooked fish before, but we were having a fish cook-off to start the summer, and I tried it. It's salmon in a butter dill sauce. Comes out perfect every time. I'll send it to you. I've gotten people who hate fish to love it, but I tend to make it with Copper River Salmon, so I only make it once a year, since it is hard to get non-farmed salmon without paying through the nose anyhow.
